Lemon & Coconut Raw Balls
This is a seemingly simple recipe but the fresh lemon zest and juice really makes these bliss balls POP! When I’m looking for a healthier alternative to that sugar craving, I turn to these tasty little morsels.

Gluten-free + Dairy-free
Ingredients
1 cup ground almonds
1 ½ cups desiccated coconut, plus extra for rolling
4 Tbsp coconut oil
4 Tbsp honey
1 large lemon, zested & juiced
1 tsp vanilla extract
1 pinch sea salt
Method
Place all of the ingredients into a food processor. Pulse a few times until the mixture starts to hold together.
Roll the mixture into small round balls with your hands. Place the extra desiccated coconut in a shallow bowl and roll the balls until well coated.
Chill in the fridge for 30 minutes before serving.
Tip
These balls are delicious made with orange zest and orange juice instead of lemon, too! If you want to make them vegan, omit the honey and use a natural sweetener or some good-quality maple syrup.
