Chicken Fajita Bowl

This combines my love of Mexican
 with my love of bowls to bring you a complete, mex-cellent meal! It never gets old. Juicy chicken tenderloins
are grilled with wedges of onion and capsicum, served on a bed of ‘dirty’ rice and topped with your favourite mexican condiments. You could easily make this dish with beef, pork or prawns instead of chicken.

15 minutes to prep; 25 minutes to cook

Gluten-free 

Ingredients: 
11⁄2 cups long-grain rice

2 cups water

1 x 400g can chopped tomatoes

2 cloves garlic, crushed

1 tablespoon olive oil

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon smoked paprika

1⁄2 teaspoon cayenne pepper

salt and freshly ground black pepper

3 skinless, boneless chicken breasts, cut into chunky strips

2 red onions, cut into thick wedges

3 capsicums (mixed colours), cut into thick wedges

2 cups shredded lettuce

2 tomatoes, roughly diced

1 cup grated tasty cheese

1 cup sour cream
large handful fresh coriander leaves, roughly chopped
lime wedges and chilli sauce to serve

Method: Add the rice, water, canned tomatoes, garlic, olive oil, cumin, ground coriander, paprika and cayenne pepper to a medium-sized saucepan, and stir the ingredients together well. Season with salt and pepper. cover, bring to a boil over a medium heat and then simmer over a low heat for 15 minutes until the rice is tender and the liquid has been absorbed. Remove from the heat and rest, covered, for 10 minutes.

Meanwhile, heat a griddle pan or wok over
a high heat and add the chicken strips, cooking for 3–4 minutes on each side until cooked through. Remove and set side. add the onion and capsicum to the same pan and cook until tender.

To serve your fajita bowl, add several spoonfuls of cooked rice to each bowl and evenly divide the chicken and capsicum mixture on top. Add shredded lettuce, fresh tomato, grated cheese and a dollop of sour cream. Sprinkle generously with fresh coriander and serve with lime wedges and your favourite hot sauce.
