Is there really any better way to put sunshine in your morning than with a tall glass of coconutty pineapple deliciousness? When I visited the idyllic islands of Samoa I slept in a little wooden fale on the beach — basically a mat on the oor with open-air windows — and every morning for breakfast the owner would serve me this mocktail, along with a platter of fresh tropical fruit. Pure bliss!

1⁄4 cup pineapple juice
1⁄4 cup coconut cream
1⁄2 cup chopped fresh pineapple
1⁄4 cup crushed ice
small handful fresh mint leaves
Method: Place all the ingredients in a blender and blend at high speed for 30 seconds, or until smooth. Serve immediately.
