Vegan Chocolate Mousse

To be honest, the first time I tried this chocolate avocado mousse I was very hesitant. Don’t get me wrong, I love avocado, but as a dessert? No way! Lisa, my favourite vegan friend, convinced me otherwise. It’s light, smooth and creamy, and you don’t have to feel any guilt when licking the bowl clean. Perfect when summer (and the never-ending battle to look good in a swimsuit) is just around the corner.

Takes: 
10 minutes to prep + refrigerating time 

Vegetarian | Vegan | Paleo | Dairy-free | Gluten-free 

Ingredients: 
2 large, ripe avocados
½ cup coconut (or almond) milk
200g dark chocolate, melted (or ½ cup unsweetened cocoa powder)
2 tablespoons agave (or maple) syrup
½ teaspoon good-quality balsamic vinegar
¼ teaspoon salt

Method: Scoop the avocado flesh into a food processor. Add the remaining ingredients and process until completely smooth. Transfer into serving dishes and refrigerate for at least 3 hours before serving.
