Coming into summer, one thing that I would really love to have in the fridge is a crispy, tangy little condiment that goes with everything – pickle. Pickling may seem a bit boring and 'nanaish' but actually it is versatile, delicious and is easy to make. There are a lot of different vegetables that you can pickle, my favourite is the humble red onion. I love the classic combo of star anise, cinnamon and chilli flakes with some red onions. These vibrant pink ribbons are a perfect staple to have in your fridge - great in your fish tacos for dinner or on smoked salmon bagels for Sunday brunch.
