This Thai beef curry, with its thick, fragrant broth, is the epitome of winter comfort food for me. It has weight and warmth, thanks to the potatoes and peanuts, yet lightness and zest, thanks to the kaffir lime and lemongrass. It’s the perfect balance of salty, sour, warm and sweet. And mild enough that the whole family can enjoy! Once you try the melt-in-your-mouth beef, you’ll be hooked, too.

Step 1: You’ve already done the hard part – choosing what to have for dinner. If you’re starting from frozen, start a day before and leave your Slow & Go™ to thaw overnight in the fridge.
Step 2: Empty the Slow & Go™ into your slow cooker and give it a bit of a stir to make sure all the meat is covered, then secure the slow cooker’s lid.
Step 3: Set and forget. We suggest 4 hours on high or 8 hours on low, but the beauty of slow cooking is that the meal is ready when YOU are! So don’t fret if you’re out for longer. It’ll still be delicious.
Step 4: Serve! It’s as easy as that. We suggest serving this Thai beef massaman curry with steamed rice and some fresh coriander to garnish.
