Za’atar Roast Lamb with Tahini Yoghurt
A whole lamb leg rubbed with za'tatar and served with tahini yoghurt.
Cooking Instructions: Discard packaging. Pat lamb dry, drizzle with a little olive oil and dress with the za’atar rub, pushing it onto the lamb as you go. Place in a roasting tray. Bake at 180°C for 1 1⁄4 hours for medium, or 1 1⁄2 – 2 hours for well done. Baste with juices once or twice during cooking. Rest for at least 20 minutes before serving with tahini yoghurt on the side.
To BBQ your lamb, preheat a lidded BBQ to 200°C. Place lamb in the centre of the BBQ and turn the burners directly under the lamb off, so just the side burners are going. Close the lid and cook for 2 1⁄2 – 3 hours, until cooked to your liking. Remember to rest your lamb before serving, as above.
