Slow & Go™ Chicken & Corn Laksa Soup

One of my favourite Malaysian recipes is a big, steaming bowl of laksa noodle soup. The spicy broth, juicy free range chicken and tender wedges of sweet pumpkin make for a wonderfully aromatic and filling meal. I love to add fresh herbs and a squeeze of lime juice to really make this laksa pop!

Step 1: You’ve already done the hard part – choosing what to have for dinner. If you’re starting from frozen, start a day before and leave your Slow & Go™ to thaw overnight in the fridge.

Step 2: Empty the Slow & Go™ into your slow cooker and give it a bit of a stir to make sure all the meat is covered, then secure the slow cooker’s lid.

Step 3: Set and forget. We suggest 4 hours on high or 8 hours on low, but the beauty of slow cooking is that the meal is ready when YOU are! So don’t fret if you’re out for longer. It’ll still be delicious.

Step 4: Serve! It’s as easy as that. We suggest serving this chicken & corn laksa with vermicelli or egg noodles, fresh beansprouts and some fresh coriander to garnish.

Ingredients: coconut cream, chicken 18%, pumpkin 7.8%, bamboo shoots, baby corn, curry paste (soy, shrimp, fish), fish sauce, soy sauce, sesame oil, lime juice, brown sugar, star anise.

Contains: soy, shellfish, fish and sesame. While care is taken, this meal was made in a kitchen also handling milk products, gluten-containing cereal products, peanuts, treenuts and eggs.

Nutritional information and serving size is based on the pre-cooked weight of ingoing ingredients. Final composition will vary depending on cooking time, cooking method and cooking equipment.
