Monday 17th December – Tandoori Chicken with Crunchy Feta Salad
This is one of my favourite summer dishes. Full of Indian flavour but without the heaviness of a curry or rice-based dish. We brine and marinate our chicken marylands for 3 days to ensure maximum tenderness and seasoning. Served with a crunchy wedge salad, toasted poppadum crumbs and creamy yoghurt raita dressing.
