]]>In 2018 I spent the better part of a week on the small, sparsely-populated island of Mljet, in Croatia, which is largely a national park. Our days were spent relaxing in the sun, swimming and exploring the island by rental car. We stayed in a simple B&B apartment on the coast, and the host couple living upstairs would bring down freshly-caught fish and herbs every evening (plus homemade ouzo, but that's another story!)
The most vivid food memory I have from our three weeks in Croatia – although we ate many superb dishes - were these barbecued fish. The cathartic act of preparing and tending to a coal barbecue, stuffing the fish with lemon and herbs and then eating with our fingers while the sun set… breathtakingly simple and mouthwateringly delicious.
Cooking whole fish is an affordable and easy way to feed a crowd. The skin protects the delicate flesh and the bones keep it nice and juicy. Lightly oil your grill before cooking, and fight the impulse to turn the fish too soon… it'll be ready to flip when the skin is nicely browned and no longer sticking.

]]>Tomato & Summer-Fruit Panzanella
Makes 4 serves / Takes 20 minutes / Dairy-free
Ingredients:
1 stale baguette, ripped into small chunks
2 Tbsp olive oil
2 cloves garlic, crushed
1 preserved lemon
500g mixed heirloom tomatoes, roughly chopped into different shapes
250g strawberries, hulled & halved
¼ watermelon, peeled and roughly chopped
1 red onion, finely diced
Small handful basil leaves, chopped
Small handful parsley leaves
Salt & pepper
Dressing
2 Tbsp red wine vinegar
1 tsp Dijon mustard
1 tsp sugar
4 Tbsp olive oil
Salt & pepper
Dressing
2 Tbsp red wine vinegar
1 tsp Dijon mustard
1 tsp sugar
4 Tbsp olive oil
Salt & pepper
Method: Preheat your oven to 180°C. Toss baguette, olive oil and garlic together on a baking tray, and season with salt and pepper. Spread into an even layer and bake for 12–15 minutes until golden and crispy. Remove and allow to cool slightly. Remove the flesh from preserved lemon and discard. Finely slice the rind into thin ribbons.
To make the dressing, combine all the dressing ingredients in a jar and shake well. Season to taste with salt and pepper. Add the remaining ingredients to a large bowl and drizzle over the dressing, tossing gently to coat. Add the crispy croutons just before serving, allowing them to soak up some of the tomato juices and dressing.

]]>Actually, there’s so many fun ways that you can pimp your coleslaw – by adding different layers of textures and flavours in there. I like to use a tablespoon of peanut butter or almond butter to my dressing to give this beautiful richness and sprinkle some seeds or toasted peanuts would be delicious. Slaws are made to be all of tossed together – I think it’s part of the fun!

]]>Use whatever herbs you have on hand – the parsley bolting in the garden or some wilted spinach in the fridge – and throw it all in the food processor. Add a couple of garlic cloves, a dob of mustard, lemon juice, sugar (or other natural sweet substitutes, i.e. honey) – then blitz to a paste. With the food processor still running, add the vinegar to give such a great tang, and drizzle in the oil. This green dressing will store for a couple of weeks in your fridge, or you could probably even freeze them down in an ice cube tray and serves up as you need them. It's a real great staple to have in your repertoire.
